Tom Collins

Ingredients:

  • 50ml gin
  • 25ml freshly squeezed lemon juice
  • 25ml simple sugar syrup (proportion 1:1 – 1 part of water to 1 part of brown sugar)
  • 50 ml soda water (or sparkling water)
  • ice cubes

Equipment:

  • Shaker.
  • Bar spoon.

How to make Tom Collins:

Shake gin, lemon juice and sugar syrup with ice and strain into ice-filled glass. Top with soda and lightly stir.

Glass:

Highball.

Garnish:

Lemon slice.
